Creamy Cucumber Tomato Salad (Belarusian Summer Salad)

Creamy Cucumber Tomato Salad with Sour Cream(Belarusian Summer Salad)

This creamy cucumber and tomato salad is a simple, refreshing classic from my childhood.

I grew up in Belarus, and this salad was simply called “Summer Salad.” It was made almost daily when fresh cucumbers and tomatoes were abundant. Especially on hot days, when you don’t want anything heavy, this chilled salad was the perfect light and cooling meal.

Made with crisp cucumbers, juicy tomatoes, onion, and sour cream, it tastes best when all ingredients come straight from the refrigerator. Fresh, creamy, and nostalgic — this is comfort food in its simplest form.

  • Add fresh dill for extra Eastern European flavor
  • Replace sour cream with Greek yogurt for a lighter version
