Walnuts, caramel Dolce de leche cookies (video recipe)

Soft walnut cookies filled with rich dulce de leche caramel. Easy to make, tender inside, and perfect for any occasion.

Dulce de Leche & Walnut Filled Cookies Ingredients (12 cookies)

  • 1 stick (113g) butter, softened
  • ½ cup (100g) brown sugar
  • ¼ cup (50g) white sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1 ½ cups (180g) flour
  • ½ tsp baking powder
  • ¼ tsp salt
  • ½ cup (120g) dulce de leche
  • 1 cup (120g) walnuts, chopped

Instructions:

1. Make the dough:

  • In one bowl, mix butter, sugars, egg, and vanilla with a mixer.
  • Add flour, baking powder, salt, and chopped walnuts. Mix until smooth.

2. Shape the cookies:

  • To make cookies the same size, weigh each piece of dough on a kitchen scale.
  • You can make more small cookies or fewer large ones.
  • Flatten each piece, add 1 tsp dulce de leche in the center, seal, and roll into a ball.
  • Arrange on a lined baking sheet.

3. Bake:

  • Preheat oven to 350°F (180°C).
  • Bake 10–12 minutes until edges are golden.
  • Cool 5 minutes on the tray, then transfer to a rack.
