Ingredients

  • 2 ripe bananas
  • 1 large egg
  • cup 75 g unsalted butter, melted
  • cup 65 g sugar
  • 1 teaspoon vanilla extract
  • cups 190 g all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • Pinch of salt
Filling
  • Cold Nutella 1–2 teaspoons per muffin
  • Banana slices about ½ inch (1–1.5 cm) thick

Method

Preheat your air fryer to 320°F (160°C) or your oven to 350°F (175°C).
Mash the bananas until completely smooth with a hand mixer.
Add the egg, melted butter, sugar, and vanilla. Beat until smooth and well combined.
Add the flour, baking powder, baking soda, and salt. Mix just until no dry flour remains. Do not overmix.
For the best results in the air fryer, place regular paper muffin liners inside small metal tart or muffin molds. The extra support helps the muffins keep their shape and rise beautifully.
Fill each liner about ⅓ full with batter.
Place 1–2 teaspoons of cold Nutella straight from the refrigerator
Top with one thick banana slice in the center.
Cover with more batter until each muffin cup is about ¾ full.
                    Air Fryer
                    1. Bake at 320°F (160°C) for 12–15 minutes, or until a toothpick inserted into the cake portion comes out clean.
                    Oven
                    1. Bake at 350°F (175°C) for 18–22 minutes.

Tips for the Best Banana Nutella Muffins

                      • Keep the Nutella in the refrigerator before using. Cold Nutella stays thick and creates the perfect gooey center.
                      • Use very ripe bananas with brown spots for the sweetest flavor and the softest texture.
                      • Don’t overmix the batter—mix just until combined.
                      • Fill the muffin cups only about ¾ full so they have room to rise.
                      • Let the muffins cool for a few minutes before eating, as the Nutella filling will be very hot.

                      Storage

                      Store in an airtight container:
                      • Room temperature: up to 2 days
                      • Refrigerator: up to 5 days
Warm in the microwave for 10–15 seconds before serving to make the Nutella soft and melty again.

                      Frequently Asked Questions

Can I make these in the oven?

Yes! Bake at 350°F (175°C) for 18–22 minutes.

                      Can I use frozen bananas?

Yes. Thaw them completely and drain any excess liquid before mashing.

Why should the Nutella be cold?

Cold Nutella melts more slowly, helping it stay in the center and creating a thick, gooey filling after baking.

How do I know when the muffins are done?

Insert a toothpick into the muffin, avoiding the Nutella center. If it comes out clean or with a few moist crumbs, they’re ready.

                      Can I freeze these muffins?

Yes! Freeze for up to 2 months. Reheat in the microwave for 20–30 seconds before serving.

Can I add chocolate chips or nuts?

Absolutely! Mix in up to ½ cup of chocolate chips or chopped walnuts for extra flavor and texture.
