Air Fryer Cheesy Roasted Garlic & Shallot Dip

Ingredients
  

For Air Fryer Roasting
  • 2 whole garlic heads
  • 2-3 shallots halved
  • 3 tbsp olive oil
  • ½ tsp salt
  • ¼ tsp black pepper
For the Dip
  • 8 oz 225 g cream cheese, softened
  • 1 cup shredded cheese mozzarella, gouda, gruyère, or blend
  • ½ cup heavy cream
  • ¼ tsp smoked paprika optional
  • ¼ tsp garlic powder optional
  • Salt and pepper to taste
Optional Garnish
  • Fresh thyme or parsley
  • Red pepper flakes

Method
 

Instructions
    Step 1: Roast Garlic & Shallots (Air Fryer)
    1. Cut the tops off the garlic heads to expose the cloves.
    2. Place garlic and shallots on a sheet of foil.
    3. Drizzle with olive oil and season with salt and pepper.
    4. Wrap loosely into a foil packet.
    5. Air fry at 370°F (188°C) for 18–22 minutes, until garlic is soft and caramelized.
    6. Garlic should squeeze out easily and look creamy, not dry.
    Step 2: Prepare the Dip Base
    1. Squeeze roasted garlic cloves into a mixing bowl.
    2. Add roasted shallots and mash until smooth.
    3. Add softened cream cheese and mix until fully combined.
    4. Pour in heavy cream and stir until creamy.
    5. Season with smoked paprika, garlic powder, salt, and pepper.
    6. Fold in shredded cheese.
    Step 3: Air Fry the Dip
    1. Transfer the mixture to a small air-fryer-safe baking dish.
    2. Sprinkle additional cheese on top if desired.
    3. Air fry at 360°F (182°C) for 8–10 minutes, until hot and bubbly.
    4. Increase to 390°F (200°C) for 1–2 minutes for a golden top.
