Chopped Chicken Fritters

Ingredients
  

  • 2 lb chicken breast finely diced
  • 400 g canned corn drained.
  • 80 g all-purpose flour
  • 2 large eggs
  • 2 cups shredded cheese any melting cheese
  • 100 g sour cream
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 2 tsp salt
  • 1 tsp black pepper
  • A little of your favorite seasoning I used Traeger mix
  • Olive oil for frying

Method
 

Prepare the Chicken Mixture
  1. Finely dice the chicken breast into very small cubes. Add the corn, flour, eggs, shredded cheese, sour cream, paprika, garlic powder, salt, pepper, and any additional seasoning. Mix until the mixture becomes thick, sticky, and uniform.
  2. Tip: If you prefer a finer texture, pulse some or all of the chicken in a food processor.
Shape the Fritters
  1. Heat olive oil in a skillet over medium heat. Use a ¼ cup measuring scoop to portion the fritters. Place the mixture into the hot pan, then gently press the top using the backside of the measuring cup to flatten.
Pan-Fry Until Golden
  1. Cook each fritter for 3–4 minutes per side or until golden brown and fully cooked inside. Adjust heat as needed to prevent burning.
Serve Warm
  1. Enjoy immediately with your favorite dipping sauce. Sautéed mushrooms pair beautifully and add a deep, savory flavor.

Notes

Storage & Freezing

Refrigerator:

Store in an airtight container for 2–3 days.

Freezer:

Freeze for up to 1 month.
To prevent sticking, place the fritters on a tray in a single layer and freeze individually before transferring to a container or bag.

Reheating:

Reheat on a skillet with a little oil, in the oven, or air fryer. You can warm them together with your side dish for a quick meal.
