Method
Prepare the Chicken Mixture
- Finely dice the chicken breast into very small cubes. Add the corn, flour, eggs, shredded cheese, sour cream, paprika, garlic powder, salt, pepper, and any additional seasoning. Mix until the mixture becomes thick, sticky, and uniform.
- Tip: If you prefer a finer texture, pulse some or all of the chicken in a food processor.
Shape the Fritters
- Heat olive oil in a skillet over medium heat. Use a ¼ cup measuring scoop to portion the fritters. Place the mixture into the hot pan, then gently press the top using the backside of the measuring cup to flatten.
Pan-Fry Until Golden
- Cook each fritter for 3–4 minutes per side or until golden brown and fully cooked inside. Adjust heat as needed to prevent burning.
Serve Warm
- Enjoy immediately with your favorite dipping sauce. Sautéed mushrooms pair beautifully and add a deep, savory flavor.
