Step 1: Preheat the Oven
- Preheat the oven to 425°F. Line a large baking sheet with parchment paper.
Step 2: Slice the Cauliflower
- Remove the outer leaves, leaving the core intact to help hold the steaks together.
- Place the cauliflower stem-side down and carefully slice it into ¾- to 1-inch thick steaks. You’ll usually get 2–3 large cauliflower steaks, while the remaining cauliflower will naturally separate into florets. Arrange both the steaks and florets on the prepared baking sheet—they roast beautifully together, so nothing goes to waste.
Step 3: Season the Cauliflower
- In a small bowl, combine the olive oil, garlic powder, paprika, salt, and black pepper.
- Brush both sides of the cauliflower steaks with the seasoned oil. Toss the remaining florets with any leftover seasoning mixture so everything is evenly coated.
Step 4: Roast
- Arrange the cauliflower in a single layer, leaving a little space between each piece.
- Roast for 20 minutes.
- Carefully flip the cauliflower steaks and larger florets, then continue roasting for another 10 minutes.
Step 5: Add the Parmesan
- Sprinkle the cauliflower evenly with the finely grated Parmesan cheese.
- Return the baking sheet to the oven and roast for 3–5 more minutes, until the cheese has melted and turns lightly golden.
- For an extra crispy finish, switch the oven to Broil for 30–60 seconds, watching closely to prevent burning.
Step 6: Make the Sauce
- While the cauliflower is roasting, whisk together the Greek yogurt, mayonnaise, garlic, Parmesan, Dijon mustard, lemon juice, olive oil, salt, and pepper.
- Let the sauce rest for 10–15 minutes so the garlic has time to mellow and develop its flavor.
Step 7: Serve
- Transfer the roasted cauliflower steaks and crispy florets to a serving platter.
