Crispy Waffle Iron Baby Potatoes

Ingredients
  

  • 8 –10 small boiled baby potatoes skin on
  • 2 Tbsp butter salted or unsalted
  • ½ tsp paprika
  • ½ tsp garlic powder
  • Black pepper to taste
  • Salt to taste (skip if using salted butter)
  • ½ –1 cup shredded cheese cheddar, Monterey Jack, or mozzarella
  • Optional toppings: sour cream crispy bacon, green onions, cream cheese, smoked salmon, avocado (salted)

Method
 

  1. Preheat your waffle iron to the highest setting.
  2. Add a small piece of butter into each waffle slot and let it melt.
  3. Place 3–4 small boiled and chilled potatoes onto the butter (depending on the size of your waffle iron).
  4. Season generously with paprika, garlic powder, black pepper, and a pinch of salt if needed.
  5. Add a generous layer of shredded cheese over the potatoes.
  6. Close the waffle iron and cook for 3–6 minutes or until crispy and golden (or follow the ready-signal on your waffle maker).
  7. Carefully remove and transfer to a serving plate.
  8. Serve warm with sour cream. Add toppings like bacon, green onions, cream cheese + smoked salmon, or sliced avocado (season the avocado with salt).

Notes

Tips
• Best served immediately while hot and crispy.
• A great way to use leftover boiled potatoes — they become completely new in texture and flavor!
• Use any cheese that melts well: cheddar gives sharp flavor, mozzarella makes it stretchy, Monterey Jack gives mild creaminess
