Ingredients
  

  • 1 beef chuck roast about 3.5–4 lb
  • 4 tbsp meat seasoning with salt
  • 1 onion
  • 4 garlic cloves
  • 2 tbsp oil
  • cups beef broth

Method
 

Step 1 — Prepare the Beef
  1. Cut the chuck roast into 4 large pieces.
  2. Pat the beef very dry with paper towels. This helps create a beautiful golden crust while searing.
  3. Season generously on all sides with your meat seasoning.
Step 2 — Cook the Onion and Garlic
  1. Place a Dutch oven over medium heat and add oil.
  2. Add:
  3. sliced onion
  4. garlic cloves (lightly crushed or roughly chopped)
  5. Cook for about 2–3 minutes until fragrant and lightly golden.
  6. Be careful not to burn the garlic.
  7. Remove the onion and garlic from the pot and set aside.
Step 3 — Sear the Beef
  1. Place the beef into the flavorful oil.
  2. Sear for about:
  3. 3–5 minutes per side
  4. until deeply golden brown.
  5. Do not overcrowd the pot. If needed, sear the beef in batches.
  6. This step adds deep rich flavor to the braised beef.
Step 4 — Add beef broth
  1. Pour about 1½ cups broth into the Dutch oven.
  2. The liquid should come about halfway up the meat.
Step 5 — Add Onion and Garlic Back
  1. Return the cooked onion and garlic to the pot, placing them on top of the beef.
  2. Cover with the lid.
Step 6 — Slow Braise
  1. Bake at:
