Quick & Easy Ground Beef Quesadillas

Ingredients
  

  • 1 lb ground beef 80/20 or 85/15
  • ¾ tsp salt or to taste
  • ¼ tsp black pepper
  • ¼ tsp garlic powder optional
  • 1½-2 cups shredded cheese mozzarella + cheddar or Mexican blend
  • 4-5 medium flour tortillas
  • Oil or butter for cooking

Method
 

  1. Heat a large skillet over medium heat. Add the ground beef and cook, breaking it into small crumbles, until fully browned.
  2. Drain excess grease if needed. Season with salt, black pepper, and garlic powder.
  3. Transfer the cooked beef to a plate lined with paper towels to absorb excess grease.
  4. Using a paper towel, carefully wipe the same skillet clean. Return it to medium heat and lightly grease with oil or butter.
  5. Place one medium tortilla in the skillet. Sprinkle a layer of cheese, add cooked ground beef, then top with a little more cheese.
  6. Fold the tortilla in half and gently press down.
  7. While the first quesadilla is cooking, assemble the next 1–2 tortillas so they are ready to go.
  8. Cook for 2–3 minutes until the bottom is golden and crispy. Flip carefully and cook another 1½–2 minutes until the cheese is melted.
  9. Repeat with remaining quesadillas.
  10. Let rest for 1 minute, then slice into wedges and serve warm.

Notes

  • Draining the beef on paper towels keeps the quesadillas crispy, not greasy.
