Method
Step 1: Chop the Chocolate
- Finely chop the milk chocolate into small, even pieces and place it in a completely dry, heatproof bowl.
- Tip: Smaller pieces melt faster and create a smoother ganache.
Step 2: Heat the Cream
- Pour the heavy cream into a small saucepan.
- Heat over medium-low heat until steam begins to rise and tiny bubbles appear around the edges.
- Do not let the cream boil.
- If the cream boils, some moisture evaporates, which can change the consistency of your ganache.
Step 3: Pour Over the Chocolate
- Immediately pour the hot cream over the chopped chocolate, making sure all of the chocolate is covered.
- Do not stir.
- Let it sit undisturbed for 2 minutes.
- This allows the chocolate to melt evenly.
Step 4: Make the Ganache
- Using a silicone spatula, begin stirring gently from the center of the bowl in small circles.
- Gradually work outward until all the chocolate is incorporated.
- Continue mixing until the ganache becomes: smooth glossy completely lump-free

- Avoid using a whisk, as it can incorporate unwanted air bubbles.
Step 5: Add the Butter
- Allow the ganache to cool slightly for about 3–5 minutes.
- When it is warm but no longer very hot, stir in the softened butter and optional pinch of salt.
- Mix until completely smooth.
- The butter adds shine, improves texture, and makes the ganache easier to spread and pipe.
Step 6: Blend (Optional)
- For an ultra-smooth finish, blend the ganache with an immersion blender for 15–20 seconds.
- Keep the blender fully submerged to avoid incorporating air bubbles.
Step 7: Cool
- Press plastic wrap directly onto the surface of the ganache.
- Let it cool at room temperature until thickened.
- For faster cooling, refrigerate for 15–30 minutes, checking and stirring every 10 minutes.
- The ganache is ready when it has the consistency of thick chocolate spread.
