  • 1 boneless lamb leg roast 4–5 lb / 1.8–2.3 kg
  • 5 garlic cloves sliced
  • 1 large onion sliced
  • 3-4 potatoes optional, cut into chunks
  • 2 tbsp olive oil
  • 1 –1½ tsp salt
  • ½ tsp black pepper
  • 1 tsp paprika
  • 1 tsp dried thyme or rosemary
  • 1 tbsp lemon juice
Optional:
  • 1 tsp mustard
  • 1 tsp honey

Method
 

Instructions
    Season the lamb
    1. Pat dry and rub with salt, pepper, paprika, and herbs.
    Sear for flavor
    1. Heat olive oil in a skillet and sear the lamb on all sides (2–3 minutes per side).
    2. This step adds deep, rich flavor.
    Layer the slow cooker
    1. Add to the bottom:
    2. onion
    3. potatoes (optional)
    Assemble
    1. Place lamb on top.
    2. Insert garlic into the meat.
    3. Drizzle with lemon juice.
    (Optional: brush with mustard + honey)
    1. Cook overnight
    2. Cover and cook on:
    3. LOW for 8–10 hours
    4. For a golden crust, place in the oven at 425°F (220°C) for 10–15 minutes.
    Serve
    1. Slice or shred
    2. Spoon juices over the top
    3. Serve with vegetables
