Why You’ll Love This Blueberry Pound Cake

  • If you love a really moist pound cake, this recipe is one to save. The batter is rich and buttery, but the addition of sour cream makes it much softer and more tender than a traditional pound cake.
  • One of my favorite tricks is mixing the blueberries directly into the batter. Don’t worry if some of the berries are very soft or break while mixing. The juices from the berries blend into the batter and help make the cake even more moist.
  • It’s also a great cake to make ahead. In fact, I recommend letting it cool completely before slicing so all that moisture stays inside.

7. Bake.

  • Transfer the batter to your prepared pan and smooth the top.
  • Bake at 350°F (175°C) for about 1 hour and 10 minutes, or until a toothpick inserted near the center comes out clean or with just a few moist crumbs.
  • Because you can use different baking pans, start checking the cake earlier. A shallow or wider pan may bake faster, while a deep loaf pan may need the full baking time or slightly longer.

8. Cool before slicing.

  • This step is important: do not cut the cake while it is hot.
  • Let it cool in the pan for about 15–20 minutes, then carefully remove it and allow it to cool completely.
  • Cutting it too soon releases steam and moisture, and because this cake is so tender and full of berries, it may also fall apart when sliced.
  • Allowing it to cool helps keep the moisture inside and gives the crumb time to set.

My Secret to an Extra Moist Blueberry Pound Cake

  • There are two things that make this cake especially moist: sour cream and blueberries.
  • Sour cream adds richness and moisture without making the batter runny. The blueberries release a little juice as they bake, creating pockets of soft, juicy cake.
  • And don’t throw away slightly soft blueberries! They are perfect for this recipe. If a few berries break when you fold them into the batter, that’s completely fine.

Can I Use Frozen Blueberries?

  • Yes. You can use frozen blueberries, but do not thaw them first. Fold them into the batter while still frozen.
  • The batter may turn slightly purple if the berries release juice, but this won’t affect the flavor.

Filling Variations

This batter is very versatile, so blueberries aren’t your only option.

You can try:

  • Mixed berries: blueberries, raspberries, blackberries, or a combination
  • Raspberries: gently fold them in because they break easily
  • Strawberries: cut into smaller pieces before adding
  • Apples: dice them and toss with cinnamon before folding into the batter
  • Peaches: fresh peaches work beautifully, but I’ve even made this cake with canned peaches
  • Nuts: walnuts, pecans, or almonds
  • Dried fruit: raisins, cranberries, cherries, or chopped apricots
  • Fruit + nuts: combine a smaller amount of fruit with chopped nuts for extra texture

Important Filling Rule

  • Try to keep the total amount of fruit and other heavy add-ins around 1 1/2 cups or less.
  • Adding too much filling can make the cake very heavy and overly moist, and the finished cake may have trouble holding its shape.

Tips for the Best Blueberry Pound Cake

  • Use room-temperature ingredients.
Room-temperature butter, eggs, and sour cream blend together much more smoothly.
  • Don’t overmix after adding flour.
Mix only until everything comes together. Overmixing can make the cake dense instead of tender.
  • Soft blueberries are completely fine.
This is actually a great recipe for berries that are no longer perfectly firm.
  • A few broken blueberries are a good thing.
Their juice adds moisture and creates beautiful blueberry pockets throughout the cake.
  • Don’t exceed about 1 1/2 cups of add-ins.
Too much fruit can weigh down the batter and make the center difficult to bake through.
  • Check the center, not the edges.
The outside can look completely baked while the center is still too wet.
  • Cool completely before cutting.
This is especially important with such a moist cake. Cooling allows the crumb to set and helps keep the moisture inside.

Common Mistakes

The Cake Falls Apart When I Slice It

The most common reason is slicing it while it’s still warm. This cake is extremely tender right out of the oven.

Let it cool completely before cutting.

The Center Is Wet

Your baking pan may be deeper than mine, or you may have added too much fruit. Continue baking and loosely cover the top with foil if it is getting too dark.

The Cake Is Dense

Make sure your butter is properly softened and cream it well with the sugar. Also, avoid overmixing once the flour has been added.

The Blueberries Sink

A few sinking berries are completely normal in a very moist cake. The cake will still taste delicious. If desired, you can toss the berries with about 1 tablespoon of the measured flour before adding them.

The Cake Broke When I Removed It

Let it rest in the pan for approximately 15–20 minutes first. A cake packed with juicy fruit is more delicate while hot.

Make Ahead

  • This is one of my favorite cakes to make ahead.
  • Because it contains sour cream and juicy blueberries, it stays wonderfully moist after it has cooled. Making it several hours ahead—or even the day before—also gives the cake plenty of time to set before slicing.

Storage

  • Store the completely cooled cake tightly covered at room temperature for about 1–2 days. For longer storage, refrigerate it in an airtight container.
  • Bring refrigerated slices closer to room temperature before serving for the softest texture.
