Invisible Apple Cake (Ultra Moist & Easy)
This Invisible Apple Cake is one of those cozy recipes that feels much more special than the effort it takes to make. Thin apple slices melt into a light custard-style batter, creating an ultra soft, moist, and delicate cake with incredible texture in every bite.
My kids especially love helping prepare the thin apple slices for this dessert, which makes it feel extra cozy and homemade in our kitchen. It’s lightly sweet, simple to make, and perfect with coffee, tea, or fresh berries.

This cake feels almost like a delicate pie with a creamy custard filling, but the truth is, it’s mostly apples. It’s incredibly moist, soft, and so delicious. The perfect light dessert after a cozy dinner like Crispy Lemon Garlic Chicken Thighs or Lamb Pasta with Creamy White Garlic Parmesan Sauce

Kitchen Tools You’ll Need for Invisible Apple Cake
You don’t need any fancy equipment for this recipe, which makes it even better for everyday baking.
Here are a few tools that make the process easier:
- Heavy ceramic, baking dish or spring form
I baked mine in a heavy ceramic baking dish and sliced the cake right in the dish after baking. - Vegetable peeler or mandoline slicer
I actually used a regular vegetable peeler to create very thin apple slices, and it worked beautifully for that delicate “invisible” texture. - Mixing bowls
- Whisk or Hand Mixer
- Silicone spatula
- Knife and cutting board
Optional:
- Parchment paper for easier cleanup
- Powdered sugar sieve for serving

Sometimes my kids love making something on their own, and when I don’t want the whole kitchen to turn into a mess but still want fresh homemade baking, they make this recipe 5-Minute Strawberry Mug Cake
If you love fresh homemade baking in the morning but usually don’t have much time, try making these Banana Oat Bread the night before and simply reheating them in the microwave or air fryer in the morning. They’re delicious, filling, and made without sugar. I love adding fresh berries on top in the morning.
Instructions for Invisible Apple Cake
Preheat your oven to 350°F (175°C).
1. Grease your baking pan with a little melted butter or oil, or line it with parchment paper.
2.In a large bowl, beat the eggs with the sugar until light and slightly foamy.

3.Add sour cream, milk, and melted butter. Mix until smooth.
4.Stir in the flour and baking powder until a smooth batter forms.

5. Then thinly slice the apples.

6. After that in the prepared pan, layer:
- A layer of apples
- A layer of batter
- Another layer of apples
- Finish with the remaining batter
7. Sprinkle ground cinnamon over the top.

8.Bake for 60–70 minutes, or until a toothpick inserted into the center comes out clean and the top is golden.
9.Let the cake cool for at least 20–30 minutes before slicing.
It may look slightly moist or underbaked inside — that’s normal! It’s just the juicy apples. The cake is fully baked and deliciously tender.

Notes
Common Mistakes to Avoid
- Cutting the apples too thick — the cake won’t get that soft layered texture.
- Using overly juicy or soft apples that release too much liquid.
- Overbaking the cake, which can make it dry instead of soft and custardy.
- Skipping parchment paper if your baking dish tends to stick.
- Slicing the cake while it’s still very hot, which can make it fall apart.
